Our food system is broken. Worlwide, we waste approximately one-third of all food produced for human consumption, while at the same time, the amount of people in the world who suffe from malnutrition continues to rise.
Food waste occurs in the fields, throughout processing, manufacture, transportation, trade and distribution, but also, significantly, in our homes. For that reason, Slow Food Youth Network launched the concept of the Disco Soup, with which we rescue food from bins and educate each other on the impact that all of us can have through the food choices we make, all while having a good time.
This cookbook takes it a step further, though. With it, we not only wanted to educate ourselves on how we can reduce food waste in our kitchens; we also wanted to collect, save and share traditional methods and recipes that have been used to conserve and preserve food for generations.
